Strawberry Scones

I have had a handful of blueberry scones in my lifetime but what about strawberry? Let me tell you, they taste just as good if not better! Think buttery creamy strawberry shortcake but in a scone texture! Oh, and I whipped up some honey butter to go with it too and it was divine...

What you need:
1 cup strawberries (diced)
Sugar
2 cups of Bisquick
1/4 teaspoon of salt
6 tablespoons of butter (slightly softened)
2/3 cup of half and half

Preheat oven to 400 degrees. Dice up the strawberries, sprinkle them with half a tablespoon of sugar and set aside. Combine Bisquick with two and a half tablespoons of sugar and salt. Add butter, use a pastry cutter or a fork to make sure butter is evenly mixed into the Bisquick mixture. Stir in strawberries. Add half and half. Use a spatula to gently mix everything until it holds together.
Then simply scoop (or use your hand) about 1/4 cup of the mixture and place on cookie sheet, leaving at least half an inch inch of space between them. Bake 15 minutes. Sprinkle with a little bit of sugar on top and bake for another 5-10 more minutes or until the tops are beginning to brown. The sprinkling of sugar over the top for the last few minutes of baking creates a simple, sparkly topping! Enjoy!
